Olive oil is not a condiment in Greece — it is a way of life. This morning experience takes you to the heart of Andriot olive culture, starting with one of the most beautifully restored oil mills in the Cyclades and ending at one of the most quietly perfect spots on the island.
We begin at the Olive Oil Museum in Ano Pitrofos, where Dimitris Chelmis — owner and passionate custodian of this 16th-century animal-powered mill — walks us through the full story of olive oil production on the island. The restored stone rooms, the old press, the short film of the first milling after restoration: it is far more than a museum visit. You leave understanding olive oil in a completely different way — how to read its colour, how to store it, what to look for when buying it, and why Andriot oil is something to seek out.
Then we step outside and into the village.
A short walk through the lanes of Pitrofos brings us to one of the many shaded springs the village is famous for — a stone fountain beneath a wide plane tree, with cool running water and the sound of nothing but birds. This is where we taste. Spread out on the table: extra virgin olive oils from Andros and across Greece, a selection of local olives, olive bread, and whatever the season brings from the world of olive-based pites and mezedes. We compare, we discuss, we eat slowly. No restaurant, no menu, no rush — just shade, water, and very good oil.
