We begin at the Olive Oil Museum in Ano Pitrofos, where Dimitris Chelmis — owner and passionate custodian of this 16th-century animal-powered mill — walks us through the full story of olive oil production on the island. Then we step outside and into the village.
A short walk through the lanes of Pitrofos brings us to one of the many shaded springs the village is famous for — a stone fountain beneath a wide plane tree, with cool running water and the sound of nothing but birds. This is where we taste. Spread out on the table: extra virgin olive oils from Andros and across Greece, a selection of local olives, olive bread, and whatever the season brings from the world of olive-based pites and mezedes.
