Day by Day

Day 1: Arrival on Andros

Your journey begins as you arrive on the beautiful island of Andros, either in the morning or evening. Upon reaching the port, you will meet your guide and transfer to Andros Town for hotel check-in. Immerse yourself in Greek hospitality with a warm welcome of drinks and traditional “mezes.” During the evening’s welcome dinner, you’ll receive a detailed briefing on the itinerary and an introduction to the foundational principles of the recipes you’ll explore throughout the week.

Day 2: Mother Earth – Cucina Povera

The day begins with a morning visit to an organic farm near Hora. Here, an accomplished organic farmer will share insights into sustainable practices and the farm-to-table philosophy, as well as provide the chance to harvest seasonal fruits and vegetables. Enjoy a light and healthy lunch prepared with fresh produce from the farm.
In the evening, your first cooking workshop begins. You’ll delve into the “Cucina Povera” of the Cycladic islands, creating dishes inspired by the region’s humble yet delicious culinary traditions, all made with local ingredients.

Day 3: Olive Oil Stories

The morning is yours to explore Andros Town at your own pace, discovering its charming streets and local culture. At noon, you’ll visit the Olive Oil Museum, where you’ll learn about the fascinating history of olive oil and the craft of homemade soap making. The visit is complemented by a delightful picnic in the museum’s picturesque yard.
In the evening, your cooking class focuses on “lathera,” the iconic olive oil-based dishes of Greece. Learn to prepare recipes that range from savory to sweet, including the classic Greek Vegetable Casserole. Taste local extra virgin olive oil in its purest form: drizzled over bread, vegetables, and salads or paired with boiled greens.

Day 4: Lemon Stories – Fish Recipes

Begin your day exploring the orchards that have made Andros famous for its lemons since the 17th century. Experience the art of harvesting lemons, followed by a scenic walk along the Megalos Potamos riverbed to Livadia Village. Here, Harikleia will introduce you to timeless family recipes featuring lemons, such as homemade lemon juice, lemon cake, and the traditional “glyko tou koutaliou” (lemon spoon sweet).
The afternoon is yours to enjoy a leisurely lunch at your choice of local spots. In the evening, the focus shifts to fish and seafood dishes during a hands-on cooking class. You’ll learn classic Mediterranean recipes that celebrate Greece’s rich maritime heritage, complemented by plenty of delectable appetizers.

Day 5: Botanical Garden Visit & Fourtalia Omelette

In the morning, visit the Botanical Garden housed in the historic Agadakis building, dating back to the 17th century. Get acquainted with the Cyclades’ flora, including aromatic and medicinal plants, fruit trees, olives, and more. After a peaceful picnic near the river, the evening awaits with a culinary highlight.
During your cooking class, you’ll prepare “Fourtalia,” Andros’ iconic omelette. This historic dish, influenced by the culinary traditions of the Middle Ages, combines fresh eggs, local sausages, and cheese. A variety of appetizers accompanies this meal as you celebrate your final dinner on the island.

Day 6: End of program

Depending on your departure time, you’ll be transferred back to the port. As you bid farewell to Andros, take with you the memories of a delightful culinary journey and the new skills you’ve gained to recreate the flavors of Greece at home.
